Peach Cobbler

On the way home from the beach one day, Matt pulled off the road to a small farm. We have passed it a dozen times and he said he always wanted to check it out. We walked into the farm house of Mount Pleasant Farms and bought a few ears of corn, as well as a bag to go peach picking in their orchard. We  have never been peach picking so we were all very excited.

We walked through their animal farm and over a bridge to enter their orchard. It was much bigger than I expected. There were so many trees and even more peaches. Peach trees aren’t very big but they grow a ton of peaches. Matt, Lyanna, and I walked deep into the orchard where the peaches were the largest and plucked over a dozen to take home. Lyanna had a blast pulling at leaves, and picking a few peaches herself. It was a great day!

When we got home we immediately sliced up a few peaches to try. They were so ripe, juicy, and sweet. We pureed a couple for Lyanna, and left a few for Matt and myself.

The following week my mom came to visit so we had to go back! We had such a nice time. The orchard smelled so good. She filled a bag to take back for her and my sister. I wish Breanne could have come in person but I know she will love the fresh peaches. Since we had another dozen peaches, my mom suggested we make a cobbler. Thanks for the suggestion because it was a delicious one!

RECIPE



Serves 9

The Cobbler:

  • 1 cup All purpose flour
  • 1 cup Rolled Oats
  • 1/2 cup Butter, slightly softened
  • 1/2 cup Brown sugar
  • 1/2 teaspoon Vanilla extract
  • 1/4 teaspoon Cinnamon
  • 1/4 teaspoon Baking powder
  • 1/8 teaspoon Salt

The Filling:

  • 4 Peaches, sliced
  • 2 tablespoons Brown sugar
  • 1/2 teaspoon Vanilla extract
  • 1/4 teaspoon Cinnamon

Preheat the oven to 350 degrees. Grease a 8 inch square pan.

For the cobbler: Cut the butter into small cubes. Combine all the cobbler ingredients in a small bowl. Rub in the butter using your hands or a pastry blender to form a crumbly mixture. Press 2 cups of the mixture into the bottom of the prepared pan.

For the filling: Over medium heat, combine the filling ingredients in a medium sized pan. Sauté the peaches until they become a darker orange and become softer.

Pour the peach filling over the cobbler layer. Sprinkle the rest of the cobbler mixture over the top of the peaches.

Bake for 30 minutes or until the filling is bubbling, and the top is golden brown.

Tips: Store the cobbler in the refrigerator for no longer than a week. Preheat your oven to 350 degrees before you wish to eat or serve your cobbler. Bake the cobbler in the preheated oven until it is warmed to your liking. Serve with a scoop of vanilla ice-cream!
